The echo sounder and radar really are just giving you spots where fish can spawn, if that makes sense. So for immersion just pretend there are school of fish below you.
the sonar will tell you where around your boat as indicated by the Triangle the Front tip is the front of your boat the back of the triangle is the rear. Position your boat accordingly as you can only fish from the rear.
An outline fish is top water, lined is mid water table, & solid are bottom fish. (as can be seen on the bottom left corner of the sonar screen) The circles are the distance, for this I mean.. I don't know just use your best judgement. Last line far cast, middle line medium cast and closest line short cast.
The echo finder tells you the specific depth and the size. so reading the echo finder is a bit more precise and from what I gather all the information comes from the back of the boat.
so if an echo finder looks like this (see below). You would want to use a medium sized hook for mid water for a fish you think would be in that area for best chances of catching a fish. and if a Fat boi is at the bottom maybe a larger hook on a bottom rod with some finely cooked steak perfectly seasoned.

If you use these tools correctly you will be able to find your own hotspots. They are all over the map. One of the best things I find about the ocean map is these hot spots are easier to find and plentiful unlike most of the other lakes where its really just one spot people farm. The ocean map really gives you reason to hunt. These spots do change so you can hunt all day. Every part of the day can be fished now as opposed to most of the other lakes when its not peak time you advance time. I find in the ocean you can always find honey hole somewhere.
How does this help the OP in any way?
Regarding your post... I'm not level 50 and approaching 800 hrs. The dlcs I've purchased expedited leveling to access waterways and better utilize the waterways that have been unlocked. I wouldn't still be grinding this game with it's deliberate gate keeping if I didn't purchase dlcs. Don't get me wrong I absolutely despise their business model! In spite of that I don't have a problem tossing in a few $s in for the game play they've created every few hundred hours of usage.
I have found this to be somewhat true in the lakes but my experience has been completely different on the ocean map, and I hope this makes its way into the fresh water.
If you see fish on the sonar they are there in the ocean map. Unless you are near birds.... At that point the sonar shows nothing... I do not know why this is but it is. Birds = fish even if sonar says no. Without birds you can rely on the sonar.
if you are in a spot that is showing fish on the sonar/echo and not catching anything simply put yo are using the wrong setup. Change your Bait/Lure hook size and try again. You will without a doubt always snag a fish if the sonar says they are there.
This has just been my experience with it. But not so much on the fresh water lakes... Mostly its just go here pluck em outta ah barrel and forward time.
This is the way I look at it too. It is very helpful and accurate when looking for hot spots, but of course as another poster said, it's really just a visual and is not accurate at all because the game's rng is coded differently.
