hi,
i would use large minnows on a #6/0 hook fish just under the surface or on the bottom that may help you.

Large or Huge cut. Livers or Kidneys. Live fish bait. 6/0 -8/0 hooks 6" - 12" depth on a float rod or bottom rod.

There are 3 or 4 good spots I know, you should watch some of the YouTube videos where gar is caught most of the spots in them videos still work, so good luck 😉

I used to catch them close to shore with helltroy telescopic rod...

Your best bet is to wait for someone to catch one. Find that player and stand behind or next to them to watch where they cast. Have your setup ready to cast when you see where their cast lands and quickly cast out to that spot. Use this method to help you find any fish you are looking for. It works great.

That's where I caught em, from memory, it stands out in my memory banks. The gameplan could have changed, have not played in a while.

Your memory banks are defective. They have never been in Florida. They were at Mud Water prior to the introduction of Quanchkin.

Match rod with Shiners, 60 cm below surface, hook size like 6/0 to 10/0. Close to seaweed or some other places (there are videos).

Make sure you use a titanium leader or you'll get bitten off! Use shiners or large minnows fished shallow under a float and also on bottom rods, or a big surface lure.
