Been trying to catch one of these for a good long while. Any tips/hints/tricks/advice would be greatly appreciated.

Best tip I can give is based on my experience on getting the trophy size for the mission. During the last 2 hours of cloudy (or partly cloudy) days when it sometimes rains. The lure bite peaks way up there when it's raining and is probably the best time to try.

I managed the trophy on a 2/0 narrow spoon when raining. Often can barely get commons to touch a 1/0. I'd go 3/0 for the uni.

Try from the boat dock area (from the dock, across to the other side and down to the entrance to the back water area, all the way down to the buoys if you want) casting to the deeper water areas using holographic (night) narrow or medium spoons fished (Stop&Go and Twitching) close to the bottom, best time (for me) seemed to be when the peak was early morning (around 3 - 5 am). Consider concentrating on the areas where you have already caught trophy sized fish before.
