In the end, you'll have to find something that works for you, but see if anything in those videos help get you started.
You can play other games for that. Some of the other games are: PCARS3, Forza, GRID, Need for Speed, The Crew.
Well sure there are other games and I played them. But when so many beautiful gorgeous and unique cars in this game are so impossible to play on default controller settings its heartbreaking!
Not sure if there will ever be a community mod for this to play just for fun on the controller the game feels unfinished as it is. Maybe a robot AI will make a mod for this one day as some humans dont have enough time to tweak the settings and actually enjoy the game.
It's not like you tweak the settings every time you play.
Gamepad settings are unique per users. What you like, someone else may not. That being said, whatever SMS set the default controller config to, someone was not going to like it so there is no win-win scenario. Be happy they provide the options for anyone to tweak the settings to their own individual liking.
FWIW, PC2 is also sold on consoles where the majority of those owners use gamepads.
- Keyboard only (without mouse)
- PS4 controller (using the pad arrows as steering, X as throttle and SQUARE as brake)
- PS4 controller gyro (using the whole controller as a steering wheel, R2 as throttle, R1 as upshift, L2 as brake and L1 as downshift)
- Arcade fighting stick (using the stick as steering, 1 as downshift, 2 as upshift, 5 as brake, 6 as throttle)
- Logitech G29 FFB wheel.
It all was playable and all was about getting used and learning how to drive, if you learn how to drive and take your time to adapt, you can be fast with whatever you want (but, sure, the harder one is the Arcade fighting stick even because I used it for fun and just to see what I could do, then keyboard is not as hard then gamepad is more confortable to deal with than keyboard and finally FFB wheel is more confortable to deal with than gamepad.
I would say the gamepad and keyboard support of PC2 is great for that (and the arcade fighting stick I was using as a keyboard at Steam Bigpicture configuration).

I dont say it is not playable or enjoyable even with a cheap keyboard, it is, but for the price of your Razer Wolverine Ultimate I would chose a G29 instead (well ...I actually did).
I know I never had such an expensive gamepad, just up to PS4 dualshock pro gamepad, but ... these special elite gamepads have more customization and (as per reviews and what I understood) some extra precision range with the triggers, for a racing game (and maybe for other games too) I think it maybe is worth for the extra precision range granting also more smoothness, but for a simulator (that actually convey FFB and properly supports a FFB wheel) definitely a FFB wheel is a totally different dimension not only in precision range and smoothness but the FFB (that can convey all track details and car reactions) and the fact it is wheels and pedals makes it a completely different dimension (for about the same price for an entry lvl FFB wheel such as the G29), but a FFB wheel requires space and at least a good and shock-resistant/stable table or a wheel stand (I use a wheel stand metal frame).
The experience from a dualshock 4 pro to a G29 is, in my honest opinion, not a world of difference but a whole new dimension of difference and totally worth it if you have the money (and space ... and a good table or a bit more space for a metal/wood frame).
I used to race R/C cars with a stick transmitter and the sticks on those are much longer and more precise than an Xbox controller! Due to having that background I use left stick for throttle, right for steering, and the lower triggers for gearshifts (I'd use the upper shoulder buttons but it's just not comfortable keeping my fingers on them).
If you want something that is more arcade but still project cars the game that you want is project cars 3.
I agree with you, but consider that the game is not equally well configured by default. For example, I have always played without driving assistance, but this is the only game in the world where if I activate the driving assistance only to "try", the driving assistance makes it more difficult for me to drive than to drive without the slightest assistance!
