Brands hatch great track nice corners, great for any class of car slow or fast:-)
Oulton park same reason as brands:-)
Mate, Hand on heart, I have'nt even tried a lap at Austria yet.. (I think) So many laps on F1 2016 though.
So many tracks to try on Pcars 2. We can't do them all of course but I'll make a point of giving the "Redbull" a try.

2) Nordschleife.
I haven't spent much time there in PCars 2 yet, but it was my favorite track for testing cars and relaxed solo laping in the first game. Not so much for actual racing, as it's a bit too narrow for comfortable overtaking.
3) Lydden Hill RX
I like rallycross and Lydden Hill is the best track for it imho. Shame it won't be present in 2018 WRX season.:(

Oulton Park, Brands Hatch - both very fun to drive on.

I love the British tracks and have done those the most because in the first game I spent ages in the Clio Cup career and having tried the Ginetta Junior career in this new game its just as good racing on those tracks again.
My honourable mentions would be Spa and Knockhill. I love driving the mixed fields around Spa its a great track. And Knockhill is a new course but I loved racing there in the rain during a great sunset - wonderful! But I've tried many of the tracks and most of them have really great moments where you get great corner combinations. there really is just too much to do in these games I didnt even get through half of the last game.

Those are the three I have spent the most time on so far. Every single track I have tried has been a lot of fun though.
#2: Bathurst - Mount Panorama (Love the elevation, I like most tracks that have hills even if not as big as Bathurst for example Sportsland Sugo, love the final turn that starts on a gentle downhill then sweeps up to the finish)
#3: All Rallycross tracks.. if I had to pick maybe Wildcrest Rallycross (Lydden/Hell are still fun but over played those in Dirt Rally/4)
May.. have also overplayed the first two in PjCars1 XD but it's what I'm going with.
EDIT: Circuit De Barcelona - Catalunya GP is also a ton of fun. Too many fun tracks top 3 is madness >.<

Knockhill (throwing the honda coupe GRC around this track is just crazy fun)
Zolder (some sweeping turns that can catch you out, more enjoyable than spa imo)
