So for handling, physics and FFB I'd go with PC2 over those two anyday- but that's just me. I try and own the more realistic driving titles.
PCARS 2 for realism , Forza 7 for fun and largest player count , GT sport try it for yourself , I'd say it is pretty good but not as simmy as previous GT's, take into account it is only a demo though.
Forza is very good mate , have you tried any of the showcase events ? in simulation mode wheel set at 1080 with all assists off , it is pretty incredible, I personally prefer sims but Forza does do a great job proving that it could easily be a sim on a few of the showcase events. But yeah overall the wheel support in the main game is unrealistic and lends itself to a more casual game, but it can be very exciting and it is really nice to have the variety.
Come join the Project Cars 2, Amateur Racing League. ( or pc2-ARL for short )

If you're legit in real life motorsports, give iRacing a spin and try to get out of rookies. Don't mind the window lickers you'll encounter at the lower levels, they are stuck there and presumably you will rise up.
The base subscription lets you run in an MX5 series that is extremely competitive at the top skill ratings.
If you want a decent multiplayer experience it's a totally different order. All titles have strengths and weaknesses and were designed to appeal to different parts of the market.
You do know GT Sport is moving far away from the single player experience...right? The single player is basically just a training ground and license type tests for the multiplayer. You may want to do a little reading up before you waste your money on a PS4 dust collector. That's what mine's been doing for the past year.
