Why name the main character Jesse and not Steve?

Because this is a Telltale original story based in the Minecraft universe, other than that, this game shares no relation to the original Minecraft game. These are all Telltale original characters, and I believe they already said Steve will not make an appearance in this game.

Notch said he regrets the name he gave Steve? since he wanted the protagonist to have an ambigious gender. Steve is not an ambigious name.

My understanding is the Telltale game is based off a Minecraft multiplayer server, you play the role of one of the players, "Jesse", on that server. I know Steve was the default player skin, even in multiplayer, but the only person I saw who kept that skin was direwolf20, but even then, later on, I believe he changed to a slightly modified Steve skin.
The only other time you had a Steve skin was if you played in offline mode, which also implies you were not playing multiplayer.
So yeah, seems pretty logical for them to not use Steve.

This is not a set in a multiplayer server, as Telltale have said "They're not going to cut to Will Ferrel at the end".
