I don't know much about herding, since I don't often play on popular servers, but it depends on who you're herding with and what their playstyle is like. Gallies are fast and so ideal scouts, just as dryos are, and due to their small size can hide easily.

Gallies are great dinos to mess with carnis with, because their turn radius is the best in the game. This means you can out-turn any carni, and get onto their tail with ease (just look out for them stopping to alt-turn). I think the best way to practice would be to go onto a sandbox deathmatch server, and test out juking the carnis on there for some practice.

AI will only spawn if there is a carnivore at <86% hunger in the area, so AI either means there's a carni nearby, or it's left over from a past carni; best way to check is to kill it and see if more spawn.
Really great advice. Have been getting better at using it although i still prefer to give the carnis a wide space rather than tango with them. Will try out the sandbox idea :D Thanks!
