Utah -> Cera -> Rex
Dilo -> Allo -> Giga
IF you can survive comfortably as a Utah, play as Cera. The playstyle encourages solo play and will hone your hunting skills. The small hunger and thirst mean that you will master scavenging and hunting small/mid-size dinos.
Playing as Dilo is very much about group play and patience, required later for the Allo and Giga (respectively).
Getting to, (and later) being an apex predator is more than just stomping around being badass. It requires knowledge of the dino you are playing, its playstyle, your prey and, furthermore expertise in the game mechanics.
I have had friends die by underestimating their prey simply because they were an apex and their prey was not. You would not believe it but, Trex dying to Dilo, Allo, Cera, Giga. One guy even died to a Utah pack. Simply because they all thought: "I'm an adult rex, I can take them". This is not mentioning the para, ceratops packs that kick their asses.
Growing is another matter altogether. 7 hours is no joke; when I play rex (which I do ... a lot), I can roll Rex in one session, then remain the same adult rex for weeks at a time.
My secret is, listen carefully:
I play the game. I do not afk wait in a bush or night log. I simply play the game as it was intended to. I honed my hiding skills as a herbivore. I did my time as a small tier Utah pack and learned how the hunting mechanics worked. I played as Dilo stalking prey at night. I played as a solo Cera, managing extreme hunger and thirst. I played as an allo stalking prey for miles during the day. I played as Giga, terrorising mid tier dinos, then finally, I played as a Trex.
The point is, to successfully be an apex predator, one has to utilise all the skills of all the dinos. Think about it for a moment; I mean really think about it. You are the largest animal on the isle, which everyone can hear coming. Most prey runs before you can see them. Most of the time, you are alone unless you have friends to play with 24/7. Apex predators are self-sufficient, and have many, many enemies.
If you are failing to get to apex, it is not that the journey is too difficult, it is simply because you are not ready to play that class yet. Even if by some miracle, you are able to become an adult in your apex class, the journey getting their determines the destination. You will still not be able to hunt efficiently or hide when you need to be discrete, or for that matter, navigate the map effectively.
Your time will come, but when you are ready for it.

PS: More practical advice would be:
Don’t speak to anyone, silence is your friend.
Avoid lakes.
When you hear an AI ignore it, if it spawns near you eat that one (Players bait you).
Trust no one, even that juvie of the same class who you grow with (players will eat you when they get hungry).
You are NEVER alone, even when you can’t see anyone.
Use headphones, sound play is important.

Got my Rex to sub-adult, tried to ambush a young Triceratops being well guarded by two adults. Couldn’t get the kill strike on my first pass so I disengaged, stalked them for about 5 mins and then moved on.
Later saw a lone Para, had no idea how big they were until I was already engaged...needless to say I got my faced kicked in and lost my first Rex at .93 to adult. Spawned a new one, got him to adult and logged out.
Will begin my reign of terror today...
Lessons learned in maturing my Rex: Stay on the periphery of map, hunt AI, stay solo...think like a stray dog.
