Servers can also choose to disable it completely or only allow group ("private" chat only for members in a pack/group) and local chat (so that dinosaurs of different species or diets can't communicate and be friends).
Either way, you're worried about the last thing you need to worry about if you're considering buying this for your children.
This game will have extreme gore and even nudity at some point, so I would definitely recommend you don't buy this game for them.

In addition, just as a reminder, this game is also planned to become an horror game.
EVEN THEN, however, it's definitely becoming a gritty, realisitic survival horror game, and I don't think anybody would want their kid playing this whether or not it has nudity.
Either way, as a final answer to the OP: play on servers that don't have rules, and disable the chat function from your settings. You do not need to use the chat while playing on them, so you should be fine. (For the full options regarding messages, refer to the first section of my first comment on this thread)
