Giganotosaurus is slower in sprint and ambush, however, it maintains said speed for roughly 50 seconds, then transitions into an ultimate tracker with a trot speed that is close to the sprint speed of Triceratops. It recovers stamina while it tracks you down, allowing it to keep trying to ambush you over a prolonged hunt as it tracks you down and gains ground.

While Giga's trot speed is intense, this is intentional by design. Giga is fundamentally meant to play differently than Trex is. One is a threat that either fails the hunt outright but has a much greater shot at succeeding in one go - Trex fails to attack something and it has failed the hunt, it must rest to be able to hunt again. Giga? Giga just tracks things down, he plays for the long game.
Diabloceratops is NOT invalidated by Giganotosaurus; as it keeps tracking you, you can just sit down to rest and regain tremendous amounts of stamina quickly. So I highly disagree with the OP's assessment in this regard. I've seen so many Diablos of late it's not even funny. HUGE herds of them killing foolish solo Rexes. Diablos are thriving with their speed buff.
Suchomimus is, however, mostly invalidated by Giganotosaurus but not because of this trot speed... But because of Sucho's inherent dependence on staying near water. Sucho spends 4hrs growing into a dinosaur that can take on several Allosaurus and match them, that's great and all, but slap an extra 2hrs and you have the monster that is Giga who can move across the map, looking for action and going after it's prey. Sucho is just... very, very slow. It's barely faster than Giga in a base sprint, and while it has plenty more stamina, it's regen is ATROCIOUS and it has a pathetic trot speed that looks broken it's so slow, and oh god, the crouch is ♥♥♥♥♥♥♥ ridiculous. Hell, it isn't even safe in the water; it used to sink which gave it stealth, but now Apexes can leisurely ambush into the water to kill it. And due to it's ineptitude to cross over stretches of land from one source of water to another...
Sucho's unviable regardless of Giga's trot speed. Gigas are not even that common. Allos and Rexes are much more abundant, and Sucho can either overpower or escape these with ease. Sure a Giga does most certainly cuck a Sucho if it begins tracking it. I'm not saying it doesn't. But Sucho is not invalidated by Giga's trot. Gigas are not common enough for that to be the case.
Giga and Trex do have substantial impacts.
Now, your case of being tracked over a long-time can occur but it is not nearly as bad as it was, and Diablo certainly is not invalidated by Giga's ability to pursue it.

The maps need more lakes, bigger with islands in the center, like they did with one of the Twins on V3. That island is pretty much the only place where Sucho is safe from being ambushed, but is still f**ked if there's more than one Giga or Rex. One can swim and push it off the island, while the other waits for the fleeing Sucho at shore.
The only thing I can think that would make any fisher stand a chance in hell is to Nerf the swim speed/stamina of any non-aquatic, which, if you think about it, non-aquatics don't really need to swim anyway.
So Giga's trot speed isn't so much the issue, more of the Sucho just not being able to rely on water as an actual refuge.
