The main trick to beating the dragon is to launch one of the eggs back at him just before he spits out more. Then when he drops, either hit the eggs still on the ground off the platform or better, if you're in a good position, hit those eggs back at the dragon. The do damage as well. If you don't get rid of those eggs, they'll spawn Saurian fighters when the dragon rises again.
For warriors the fight is easiest, for mages and rangers you want to have an open slot next to your weapon so you can just melee the eggs.
Start the fight by melee hitting the egg in the center. This brings the dragon up, she'll roar, then move in a direction. Follow her and stay close. When she makes a move to spit an egg, run towards the center to avoid it. As long as it doesn't fall on you it won't hurt you. If it slides across the floor into you it's fine. You can walk over it without damage.
Leave it be, and move so that you always have that first egg ready to be hit towards her. When she stops to spit the next eggs (there will be three), kick the first egg into her then move back so you don't get hit. Hopefully you hit her, but even if you did immediately hit the other three eggs toward her, then move to do damage if she's down. If you didn't, hit two away (doesn't matter if you aim, just get rid of them) and save the third to hit her when she spits the next egg.
A warrior will always need to rush up to her, but as a mage and ranger you want to equip your weapon and move towards her while shooting. When she gets back up, mages and rangers need to go back to the empty slot to melee (or use scythes/daggers, but it doesn't matter as long as it's not ranged... ranged weapons will occasionally target her and you'll die a lot trying to get the targeting right).
She gets back up, and she'll move to spit one egg. Then three. It's all rinse and repeat from that point, keep getting her down and hitting her until she's dead.
So that you can see it in action, I'm uploading a vid to Youtube showing me killing the dragon with a new level 1 ranger without using the bow (partly to show off, but mostly because it shows the timing far more than if I used one of my other characters to down her quickly). Near the end I intentionally miss the first egg to show you how to recover pretty easily.
