If you simply want to have fun and run around, then a crit heal damage build is the way to go (it's the most used set up for all classes). It would be something on these lines:
I dont know which level or class you are, so gonna focus on stats for helmets and gear:
Critical Heal Build
Helmet: Critical Chance (for warrior and mage) - Archer station III + 10%
Cumulus (the crystal green one that drops from Chtiris) for archer
Gloves: Warrior (+ melee damage from archer station)
Mage (Wicked gloves for + 10% critical chance) (you can find my original mage build at my guide for the bosses, this buid is for general gameplay)
Chest: Kings (all classes - Anvil IV) - gives life leech on crit, all classes
Pants: King's (Anvil IV) - gives Critical Chance and Critical Damage, all classes
Cape: Watchman (Archer IV) - more cc + cd all classes
Ring: Critical Ring of Thunder (Anvil II) all classes
Weapons: Mage - wand (Critical Chance + damage)
Warrior - Axes (critical chance + damage)
Ranger - Longbow (Critical Chance + damage)
For talents, potions and whatnot, plz check my guide.
With this you can basicly clear all normal game by button smashing, cause you will heal the damage you receive... that's that.

I have two characters so far and both of them are hybrids (a scythe mage and a ranger who likes spells and shortblades); of course anyone who knows RPGs knows hybrid builds usually suck, but I don't really have any problem playing these two, even solo, and even against bosses...
I haven't done much with the Hard Bosses yet (I've gotten the relic to fight the Thunder Worm but haven't really faced him yet) but presumably they might be hard enough for builds to matter.
For the base game, though, it really doesn't matter. Honestly, Carlo's critical healing build is nice but not necessary. We're talking a change from "easy as long as you're careful" to "yaaaawn, when's luncthime?"
all classes benifit from wearing assasin helm, chest and a shining ring of battle.
as a ranger, use the orb theif perk and a hyperion bow
for a mage, use lifesteal and mana steal, the hood gives crit reset anyway
for a warrior, use the best sword avaliable. preferably a crystal one
for legs ALLWAYS use paladins, or HM`s will one shot you (except mage)
assasins gloves for warrior, wicked for mage, anything for ranger
use a marksmans cape, but if you are playing as warrior, battlemasters may be better.
pets do nothing :D
rangers benifit from dodge perks, but remember to have orb theif, or you wont be able to regen HP.
wizzards should use the crystal staves, they provide high mana regen bonuses and spell dmg resist, allways chose the 30% spell reduction perk and both leeches
warriors are a tough one, the choice is fairly boring, as long as you pick the shout bonus.
in order to survive, put all your points in strength and use deafaning roar with the empowered lung, this reduces damage by 70%
for each HM remember to check a move guide to know what to look out for, allways use a spell resist weapon (hyperion for ranger, cos of orbs!)
You CAN use cross class armor, just the HIGH tier is locked.

I was disappointed that my ranger can't use his Gold Calamity anymore, though. :\ (Or whatever it was called. The golden greatsword. IT's not super powerful or good for any sort of build, but it's cool.)
Another fun way to do it is to throw an Assassins Tunic and Ring of Battle, then spec Combo Swing instead of Exploit Weakness (For archers). ~20% chance to shoot three times + Massive crit damage. You can actually beat World's End Normal in one round. (With only gear you get from teching up). Great for farming Astral Hearts.
With that, apart from the paladdin shoes and watchmen cape, i use all the mage wicked stuff.

crit chances and mana from gloves, crit dmg from torso, reinitialisation on crit from the hat, crit from watcher's cape and from the now thunder ring.
the funny thing comes with the perks
mana steal (perk lvl 20) gives mana randomly from hits.
blood magic (lvl 30) gives health randomly from hits
mana shield and magic armor are nice but are not related to the build, i use that anyway :D
the result is just gross to watch : poison rain 2 that crits often, chain dmg => spell reset => more poison rain, and you over heal and over mana from that.
For the warrior i used to do the crit build as carlo said : crits and the axe, i loved that! but now i don't think its worth it to do full crit with lower chances (only 8% with the hat!) using lvl 3 archer craft station. I use now a hybrid multi hit and crit using always archer lvl 4 or anvil lvl 4 :
assassin torso, assassin gauntlet and assassin hat, that provides the multi hits and more dmg on hit regardless if it crits or not, then king legs, thunder ring and watchmen cape., for crits, paired with the axe. if you want absolutely the crit heals (for example when you farm, but i don't think its that useful vs a boss, i prefer to use a potion there) ofc you can still use the king torso.
for max dmg its not good to use just multi hits or just crits now, i'm convinced you have to do both, as i stated. Perks always in favor of dammage, full glass canon there.
Archers can go full crit, but since you can't build as much strength as a warior, i like more to do full multi hits, likely the same build as robotnik stated. but thats personnal taste ^^.
some things i said are the same than carlo, but i hope i brought some interresting informations as well. c ya.
Hybrid is still "do-able" but with the default Stat spread forced on the characters, they are a bit less effective in some cases.
Everyone can still use magic, So you can still make a Warrior who self heals. Archers who use shouts to stun air enemies, and melee Mages (Scythe still OP).
Just certain endgame armours and all weapons are affected by the class restrictions.
