1. Don't sneak if possible. Since it's hardly possible to react to the falling of the boulder, move quickly and with a light source to avoid them. This way, you either see the holes in the ceiling with your light, or because you're moving fast, you're already out of the danger by the time it falls.
2. Don't stop moving when you hear the rumbling of the boulder. Instead keep running and listening and see where it might roll, to stand in a safe spot.
3. Boulders don't actually always one shot you. You can tank the damage once you become strong enough. They will take about 70HP but the boulders will literally shatter on impact.
To tank the damage it would be best to stay at full health whenever you can.
4. Boulders are obviously the most dangerous in a narrow spot. Be careful when going through unexplored 1x1 spaces, they can also be dead ends, leaving you no escape even if you outrun the boulder. The next tip is good to trigger such boulders.
5. You can trigger the boulder traps by throwing an item under the hole. Also works with other traps like arrows. But remember to move out of the way, because it might roll back towards you.
6. Play with a friend. If one of you survives, he can take your loot box and you get revived in the next level, and your friend can give you back all of your items. You only miss out on a bunch of XP, if you die early in the level.
7. If all else fails, you can disable boulders in the options (disable traps).
