Play less like a knight and more like a rat. Unless you're a warrior with a nice shield, slugfests early on usually aren't a good use of your health.
Multiplayer can actually make the game harder, since XP and loot is split. I find solo easier.
And yeah, I recommend trying to fill your inventory with gear that's practically useful. Gems are worthless paperweights unless you find a general/jewelery merchant, and even then you probably can't appraise them. And even then, they're probably just worthless glass. You usually get plenty of gold through a run.
It's generally better to preserve health than to heal it, you don't usually get enough healing items/spells to smash through fights. Play sneaky, play ratty, use spells, ranged attacks, hit and run, use shields, all the good stuff.

Maybe somebody else here has some of their own favorite tips to share that helped them get past the initial learning curve. A good general rule I like to keep in mind with inventory problems is: "If I'm not going to use it in the next 5 minutes, I should drop it."
My inventory is often bogged down and this rule helps me prioritize properly to keep from being super slow and getting run down by enemies (or boulders) due to my poor speed!

Play Smart not Hard, this is primarly a multiplayer game while it can be enjoyed solo the game is far more lenient when you have someone else to carry the burden of you getting squished by a random boulder.
Also don't expect to sell those gems not once have i came across a trader that bought those haha, and i hoarded em too.
I have taken your advice to heart, and embraced the method of "Bonk them on the back of the head and run away" and I fared much better... Until I got over confident running in the dark and had a boulder land on my head..
Having a much better time of it now though :D

Also-- if you prefer more direct melee to constant sneak attacks, two things; your attack range is slightly longer than theirs, and they always aim straight at you. If you're clever and quick, you can hit enemies and get out before they have a chance to retaliate, or trick them into getting their swings caught on objects and walls you can just strike around.
I hang on to gems to sell, usually the starting room is where I drop all my valuables that i don't use then I clear the floor and go back and choose what to take with me.
If hunger isn't an issue I would max out swimming by hanging out in the water during the swamp levels.
I have beaten the game but I have not beaten the gnomish mines, I don't think you should do side challenge areas if you are already having difficulty.
