Ah! Some nice questions.
I'll explain Bless and curses per each item type.
On Weapons
It will add +1 damage for every level of blessing, and may(?) make it harder to break, though I've never seen it do much else. -- Fun fact: Axes have 1 extra damage naturally, and this 1 extra damage seems to always pierce Armour Class! You deal 21 damage? (That extra point being your axe's +1 damage) The enemy has 31 AC? You should still deal 1 damage, it seems?
CURSES on weapons remove damage, and make it impossble to unequip. Do not equip these.
On Equippables like Armour, Necklaces, and Rings. It always has a few extra effects, but it will usually always (...Exception being Glasses and Blindfolds.) add 1 extra Armour Class -- Which is 1 less damage taken.
However, depending on what's blessed, it may add an extra effect!
If you have Steel Gauntlets of Strength, and they're blessed, that is +2 Strength, and +4 AC!
Similarily, for Rings, if it's a +2 ring of Constituion, it will add +2 AC, and +3 CONS stat.
This applies to all pieces of gear, a +1 wizard hat will have +1 AC, and +2 INT.
-- Though, Amulets will usually not receive any additional benefit for being blessed aside from extra A.C, and in the situation of Glasses, it will simply add extra PER for every level of blessing.
However, when CURSED, they become unequippable, will lose as much AC as levels as they have in cursing (1 = -1, 2 = -2 AC, ect)
If it's a ring or an amulet it will usually have the inverse effect of what it says it will
A -1 ring of slow digestion may actually make you starve far faster than what it says on the tin.
A -1 wizard had will add -1 AC, and -1 INT... Be careful!
On scrolls, it does a variety of effects.
a +1 scroll of enchant armor will actually add 2 levels of blessing to a piece of armour. Instead of 1. A +1 scroll of summoning will summon far better allies than a normal one.
A +1 scroll of food, will spawn blessed food... Which I will get into a second.
-1 scrolls usually do the 'opposite', A -1 scroll of 'enchant' armor will actually try to remove a blessing level, or even curse a piece of armour.
A -1 scroll of remove curse will ironically curse a piece of gear.
And, -2 summoning?... That can put a minotaur in your face!
+1 Food, I believe makes it so you are less likely to vomit eating it.
So a +1 Mouldy food would be more like an Aged or a Slightly Aged, as opposed to being Mouldy. And a +1 Slightly aged would practically, for all intents and purposes, be a Fresh.
The opposite applies to cursed food.
A -1 Fresh Breead would be like Slightly Aged ,or An Aged.
While -1 Mouldy Food would be quite literally like a -1 "Rotten" Food
Spellbooks on the other hand, are always bad news when cursed, and will REMOVE a spell when used, they even crumble to spite you!
Though, -1 Gems, Glass, and -1 throwing items, and if you've got a high skill in Shield(Such as monk), -1 shields are all just as normal!
You can throw a -1 piece of glass or throwing weapon like any other, and look at that! It's just like normal! Maybe a bit less damage, but hey! So always carry these. Just know you'll have to throw to unequip.
Usually, it's ideal to use blessed over cursed, unless you want to have fun with faster hunger rates or the similar (Which should be base modifiers you can add to the run, just for fun in my opinion.)
But in any circumstance: I've found out that even -1 Mouldy food has a singular use. of taking you ever so slightly further. If you're dying of hunger, eating it will still make you starve, but it may help ever so slightly, giving you those few extra seconds to explore.
Always appraise gear before equipping it, you'll need to go up the appraise chain
(Cheese/Meat -> Potions/Books/Scrolls -> Basic gear -> Decent Gear -> Spellbooks -> Glass/some Gems -> Excellent Gear/Gems -> Final tier Gems)
An Amulet of Strangulation is usually bad news, even a +2 one will be turned into a -1 one, so you cannot equip it.
The best way to avoid Amulets of Strangulation is to appraise gear before equipping it.
Though in any situation, I know there's slip ups time to time, and you'll equip one without wanting to.
They have a chance to break trying to kill you, and other times, they can be uncursed with a scroll of remove curse, thus allowing you to unequip it or toss it.
Also remember, that Gems are great boulder weapons. A well aimed gem into a boulder trap could deactive that dangerous boulder trap, or even send it hurling into that helpless sleeping troll, giving you the last blow.
Surviving longer is a good mix of knowing your class, what you have on hand, and what your strategy is. -- Slightly changes with food on or off, but are you the Rogue who slinks through the dark, The monk who walks up, and doesn't stop unless they need to? Or the wizard who watches their own back, spraying down enemies with spells when possible?
There's a handful of strategies I can share for alot of classes, though that would be very, very long to write out, and I think it'd be better suited for a guide. In any case, always set forward a strategy, and watch your back, even in combat.
Darting when that enemy comes for your flank, or when that boulder comes could be the difference between a successful run, or a failing run.
Ah, rare question, but always a good one!
You may have heard me mention sort of an "Appraise chain"
It starts at Cheese, Meat, and a few other items.
Start at these, and go up the appraising chain, from there move to some basic non-spellbooks, Potions and Scrolls, then you'll move up to basic gear, which is common gear, usual amulets, very few spellbooks, and many other things.
At decent gear, you'll be able to appraise quite a bit of gear I don't remember the exact specifics, but this is usually what I personally find acceptable in runs.
From there, spellbooks are usually a good next goal, appraising lots of them
Then to Glass/Gems (Fun fact!: You can tell if it's a Gem or piece of Glass based off of it's previous values, A Gem worth 1, and weighting 2 is always a gem, while Glass is always 0, and weights 3)
And, so on...
Though, the best way to level it is to try and follow this chain to the extent, it's more of a mix of this, and picking up every single item on the map to appraise, and working from there.
Will give you alot of gear to work with, but remember to keep your weight as low as possible. So only keep a few items to appraise at once, before going to pick up more, or you may find yourself in bad situations.
Though, a fun little fact I like to add to all of my help posts: Don't be afraid to equip cursed throwing weapons, cursed magic staffs, or cursed gems. They're all easy to burn through, or to toss away in an instant, removing the issue in the first place.
And, if you feel like your Shield skill is good enough, or you are Monk, feel free to equip Cursed Shields too.

The appraisal chain is more of what can be appraised with what level of appraise, though higher-tier items do tend to give improvements, and many more compared to lower-tier items.
But yes, the more items you appraise - Usually successfully, but occassionally unsuccessfully, will give you improvements in appraise, meaning you can appraise more, and much faster, with less chance to fail.
Gems are one of two things.
Boulder trigger-switches, or sellable items/extra high-score items.
Worthless glass is the former, in which you don't really sell it, you throw it under those holes in the roof (Boulders) to activate them, so they aren't as likely to catch you off guard. Useful for long, dark hallways, and other circumstances such as unavoidable boulders in hallways.
If it's an actual gem (Not worthless glass), then you can sell it for the total price it's worth (When appraised.) -- or you can hold onto it until the end of the run, for extra Score.
Cursed beartraps usually break, but yes if you can successfully place them, you should make use of them. Just don't expect to rely on them.
And, yes, you always should use cursed throwables if you've got nothing better, as they still can be thrown at enemies, and thus used as a weapon, regardless of their cursed quality, and you can still quickly throw it, and swap to that spear of yours, to give you that extra edge, and damage before the actual fight, just remember it cannot be unequipped until you throw it.
I think they do less damage, however I have not done conclusive testing with cursed throwables, to see if they do or not. So take that bit with a grain of salt.
Ah, cursed spellbooks.
Let's say you have a Spell of Slow, Spell of Light, and a Spell of Healing, read the cursed spellbook, and it will remove one of those 3 spells from your list. So it could remove say... Healing, you can no longer cast your healing spell, and will need to re-read the book, or find a new book to re-learn the spell. -- Afterwards, the spellbook will crumble, to ash, and thus disappear from your inventory, so it affects both your character, and the item.

Ah! Another fun question.
A good way to deal wtih minotaurs, if you feel fearless and strong, is to take two throwing weapons (Tomahawks, Blessed Gems, Daggers, Chakrams, Shurikens), and to keep kiting it across a loop in the map, smacking it with those throwing items, and picking them back up as you carefully and swiftly loop around.
It's slow, and has alot of room for error if you take too long getting your weapons back, but it definitely can work in the right circumstances.
Though, I would consider this a Minimumlist approach to the problem, using as little gear as physically possible, per say.
Another good way is if you don't have any good way to kill it, to prepare a Spell of Cold, or a Spell of Slow, or a Staff of Slow/Cold, and to shoot the minotaur if it begins to get too close, or gain on you, or if you feel you need a blast to pass by it. This isn't a method to kill it, but more a method to make it less of an obstacle.
However if you happen to get the ZAP Brigade to spawn, this is an effective method to kill the minotaur, and get yourself a decent chunk of that ever nice ZAP Brigader gear. Slow it down, run past a horde of the ZAP Brigaders (Becareful, the Minotaur may sometimes still try to hit you) and let them deal with it, Keep slowing it down, so it can't harm as many of them, or you if it goes for you.
If you happen to have a good amount of magic, and a few nice spells, or alot of Fire or Lightning, or the ever rare Magic Missle in your inventory/spells - Cursed or not, spam them at careful accuracy towards the minotaur, It will die quickly, just be wary of the durability of your staff, and always be prepared for a second plan if you happen to run out of mana, or happen to lose all your staffs.
Another method is to have some accessible teleportation, such as a blessed Mirror, on most levels, you can practically teleport away every time it threatens you. Do be careful of boulders and spikes, though. Sometimes lava.
But, if you have none of the above, it's best to spend as long as you can, and see if you et ZAP Brigaders, you can attempt to slay it with them, but in many situations, it's best to wait for it to spawn, get as much loose gear near the exit as possible, and book it.
If you're not past Level 20 usually 43 AC will let you tank the Minotaur
Hmm, that explains a bit of it, while your class usually doesn't infleunce much, Jester definitely is one of the harder classes to play. - Especially without a team to support it, though as benefit to not seem like I'm claiming it's 'impossible', there is indeed a developer who has a high-win rate with Joker.
If you find it fun, go with it, though if you're finding you die a bit too much, I could suggest Cleric.
You will know if you are hungry, indicated by a flashing bread-icon.
ZAP Brigaders are uncommon NPCs that will appear on Minotaur levels ocassionally, usually doning a +2 Excellent Hood, a +2 Cloak of Protection, Boots of speed, Excellent Leather Gloves, and an Excellent Leather Breastpiece, their weapon is a +2 Staff of lightning, they also have an extra +2 Amulet of Magic reflection equipped, hence why their gear is usually nice to nick if you can.
Though, random characters can give some good runs.
When it comes to Joker though, I cannot help there, outside of multi-class tips, since I am far, far, FAR from the best Joker player, and the fact I usually cannot pass Swamp with Joker. I am by no means a rulebook to go off of for saying "Joker = bad", do not take my words as that. I'm simply not a perfect player.
