Confusion regarding weapons and armor on specific classes
So, I'm confused as to why you wouldn't just use a shield, sword/maxe and heavy armor on every class regardless of whether you start with them.

So for example, why would I NOT wear heavy armor on say, a Wizard?

Some of the late game armor requires high strength and dexterity to effectively carry heavy amounts of weight without moving too slow.

Wizards and caster classes have slower growth in STR/DEX so typically have a harder time compared to STR based classes when it comes to carry weight. Of course if you can handle the movement speed penalty you're free to equip your wizard in full armor!

Different classes have different starting weapon proficiencies which determines the damage you can deal, but our use-based skill levelling allows you to adapt to the weapons you find along your run.

Also consider that a wizard, even in full plate, still has very low hp. While the armor may protect you from enemy attacks, the speed reduction may limit your ability to avoid traps, like boulders, which laugh at your full plate.

In regards to weapons, yes you can use any type of weapon, but the higher the skill, the better the damage and the lower the durability loss. Look into the skills (on the right of the inventory), and you can see what each skill affect, as well as what the legendary effect (100/100) is.
