But legendary beasts can not be re-tamed or re-spawned after they die.

be sure to stun or kill enemies around you then revive the beast with meat
just don't die .. oh god don't die or your beast will be gone for good
but yea beasts on survivor are a bit more situational than on normal
for example i use rare jaguar to kill off single guards in stealth then i quickly dismiss the pet before he gets in trouboe .. rinse and repeat till area is safe to proceed
PS: which begs the question
what is the best combat Beast to use in survivor.. which one will dish out the most dmg and survive quite long aswell

Ya I've run into that, too - I've just made sure to dismiss the special beasts when I get in those areas just to play it safe that I won't lose them. Lost a regular Sabretooth too many times in those situations.
Esc, SAVE, Alt+Tab, open saves folder (C:\Program Files (x86)\Ubisoft\Ubisoft Game Launcher\savegames\*long number*\2029) and backup 2029 folder.
If the worst happens, exit and restore backup-ed save (overwrite existing 2029 folder with previously backup-ed 2029 folder).

Sure, if you lure a sabre tooth into the water he may die.
But everything else must be a bad game. Probably my PC just loves me to give me that few issues with almost any game.
My creatures went K.O. very, very often when I played on expert with permadeath. But you can get them up again by giving them a nice piece of meat.
But NONE of my creatures ever died completely.
Don't know what I do wrong or right, but I am glad that I hadn't to struggle of dead pets.
