It's all about practice. Just practice his release in shoot around and keep doing the same fade every time. Post Hooks actually have timing too even though there's no shot meter. For Post Hooks it's about the same as a jumpshot, you let go of X/Right Stick as soon as the Hook Shot is at it's Apex (Highest Point). Fades are generally hard to hit without a lot of practice even if you have 99 post fade rating so don't stress too much about it.
