Tiburon, made by The Pride, unarmed light carrier that looks like a smaller version of their bases
Rex, made by The Beggars, Brig's big brother with an impressive health pool and armed to the teeth with railguns
Cormorant Mk2, made by TSF, the biggest, meanest carrier in the game
The 'Reborn' faction has a lot of ships similar to Dropper in that they can drop smaller ships.
I would probably avoid Droppers because they are unarmed, and once you drop the drones you can't do anything else with it until you dock to replenish them.
Swordfish corvettes, made by Kind, have a secondary 'ship shooter' weapon that drops teardrop drones like the Dropper does, but it replenishes it as ammo over time in battle. In storymode they don't exist until after you take over sanctuary.
Some are attached - like in the case of a Cutter corvette having attached Furies
Some can be auto built in the ship and launched - like the Beggar destroyer Envy (that has a hangar that can build ships)
Some can be specifically manufactured by the player then launched - like the Reborn carrier Rex (that can be docked with and functions like a mini base)
So it can get a bit complex in a sense for new players.
It doesn't help that the Envy can be considered a carrier because it builds and launches ships - and it is different than a Rex that does this too - but also you can dock with the Rex and build/house specific ships in the Rex (using ore).
So the term carrier is pretty loose in Void Destroyer 2.
