There is a "pause" - it's not a 100% stop - but it slows down the action quite a bit, in my opinion it's cooler than a pause because you can see movement which means you can plan tactics of sorts.
But let's back up a bit for a sec - to stop your ship moving in Overworld mode you can hit the H key (as in "hold command"). This isn't the pause I'm talking about.
To slow down time - it's SHIFT + T - this works both in ship mode and overworld mode and should give you far more time to make decisions - though not infinite. This actually toggles in automatically if you are issuing move commands in oveworld mode, when you are near enemies, a big object and when you just enter overworld mode.
This is because you have the enemy targeted as you enter overworld mode - having an object targeted in ship mode - means you have it targeted in overworld mode. Having a target in overworld mode means you go towards it. A simple solution is if you don't want to change direction - don't have anything targeted in ship mode as you enter overworld mode.

Also thank you for the time dilation tip. I had actually used that once in battle, but then forgot about it later as I never used it again because I like the fast paced combat in this game. I could see that being useful once I get a fleet.
Makes since on the targeting issue as well. I will remember to deselect an enemy when fleeing to overworld mode. Pretty cool the developer responds personally to threads to help. I don't see that often!
