How do you effectively kill this thing?

Too tall to jump over, blocks everything I throw at it (sword and magic). The very first one you encounter on the first stage I was able to kill because it was in that blood pit and once it hit the edge of the pit, it turned around...allowing me to attack it from behind and kill it. Can't do that here, so how is it supposed to be killed?

Link is dead OP, but it sounds like you have issues with an elite enemy. Time your block perfectly and you can parry them, which leads to a riposte.

As Kerrik said, you have to parry them. Hit the parry button just as the sword comes down on you. This will leave the enemy stunned and you can go in for a critical hit. For this particular enemy you have to do this two times in order to kill him.

Alternatively, if you have trouble with parrying, you could use this method.

Run up to them and then dodge backwards just before they swing down onto you, and then charge up a thrust attack, you should get the timing right where you will thrust into him just as he raises his sword to hit you again, and so he won't block your attack (and you will interrupt his attack). Rinse and repeat until dead. It'll take more hits to kill them like that, though (4 I believe)
