how do i destroy Portals??

I have played for a while and i cant figure out how to destroy a portal and progress the game, I have knights and i heard that you use them to do it but im not sure. please help me :)

The Knights create an outpost that they patrol just outside your furthest walls. You pay 6 Gold at this outpost to begin their assault ♪

My knights just get completely slaughtered when i do this and the defense wave of mobs kills half my town.

During the first 10 Days Knights can destroy a Portal with their first assault. But it spawns a ton of enemies after you destroy it. If you don't have an adequate base defense then make sure you've at least got 20 coins on hand to litter the ground with shiny bribe money so they leave your base alone. After Day 30 you usually have to Assault each Portal 3 times with a maxed Archer Shrine buff.

Does damage done to portals stay or do the portals get repaired over time?

The damage dealt to Portals is permanent. With the new patch, a full army will always deal at least a little bit of damage even on Day 100. (which prevents end game Stalemates.)
