OP, there are four ways to get coins:
Finding chests out in the forest
Collecting your taxes from a chest that spawns next to your campfire every morning
In the daytime your Archers will go out and hunt rabbits and deer
In the daytime your Farmers will farm at an available piece of farmland.
No, you can't get off your horse. The game is very minimalist, and the "Rulers are useless" mentality is probably a political commentary. You can interact with the world in two ways: Scaring deer towards your archers, and picking up and spending coins.
