Difference Starbound vs. Starbound unstable

Hi I newly bougth Starbound finally after long thinking about it.
Now I have "2" games Starbound and Starbound Unstable what is it about?
What is the difference and which game should I start playing?
Is unstable kind of a linux server host programm?

Starbound Unstable is where you can test new updates but you cannot use mods and it is more likely to crash and Starbound can be modded, it's less likely to crash and you cannot test new updates.

actually you can use mods with unstable but to use workshop mods you need to copy file from the stable ver to unstable

i didnt know there was a difference at all, last update where unstable was ahead was like 2017? now all the updatse seems to go straight to regular, and there doesnt seem to exist any nightly or stuff like that... im not even sure theyr working at the game anymore.
