Maybe after spending, say, 15 minutes on a level unlock the option? I mean, I get it, I really do, dont't want to make it too easy or people will just give up if they don't get it right away.
Another option would be to split the "stunt" levels into a seperate campaign with seperate progression.
Totally stuck the landing, too. In more than a few trial runs it barely made it in on its back wheels.
The latter option is a fantastic idea.
A straightforward campaign without any silly stunt nonsense to function as an extended tutorial for how all the stuff works, then an extended campaign for stunts.
