You have to understand that Wurm is intended as a VERY hardcore game. People who say you can play Wurm Online casually has simply never played Wurm Online. I have played Wurm Online for years and I could give you a decent setup for a first timer. But you will have to provide more info as to what your play style is going to be.
1. Are you playing solo and planning on keeping playing solo on that server?
2. What other similar games have you played and enjoyed?
3. How much time do you have to spend on average on the server each day?
4. How would you rate your own patience from 1 - 10 (10 being very good)?
I found this version to be a bit faster than I am use to but now I like the pace.

True, the standard settings are still MUCH higher than WO. Problem is he is an inexperienced player, thus too high rates will mess up his gameplay in a way that is no longer enjoyable.

He should evaluate if this game is for him in the first place. Not because of the speed of the game but because I have found some gamers buy a game with expectations different from the general 'cadence' of the developer and that often ends up clashing down the road
Completely agree, thats why I am offering help to offer the best environment to judge this in.

A. I'm playing solo for now and want to get familiar with the game and how to do things before I begin recruiting friends to play. Depending on the damage done during my solo play, I may or may not wipe the map and server when I'm done playing solo.
2. What other similar games have you played and enjoyed?
A. Games like this? Minecraft, Savage Lands, Ark: Survival Evolved to name a few.
3. How much time do you have to spend on average on the server each day?
A. A few hours a day and more on the weekend.
4. How would you rate your own patience from 1 - 10 (10 being very good)?
A. A 7 or 8 I'd say. I'll admit when I started playing WU I felt it was slow, but as I got around a bit and spoke with the NPC who helps you learn the basics via quests in Adventure mode, the game started getting more enjoyable. Although digging a tunnel to create a mine took a bit too long in my opinion. :)

A. Just in case this helps. I played Ultima Online many years ago. The skill progression seemed ok to me on that game. I know UO is not like WU, but when it came to skills and fighting abilities, the progression there seemed a decent pace.

PS: I can't say for certain (yet) but I think what might end up happening is that I'll look to build on a map and create a town or two, perhaps a keep with a dungeon or cavern and then aim to run the server for my friends in a more cRPG style than Minecraft sandbox. I loved building and creating things in Minecraft, but a few of my gaming friends weren't into the daily grind to obtain resources then build things. They were more interested in a cRPG type thing like Ultima Online, Everquest, etc... What I loved about Minecraft was that I built a rather large keep with a mine, and dungeon beneath it. The fun part was that I did this while actually playing the game so I had to deal with monsters, resources, etc... I was essentially playing the game and designing my own adventure area for future players to enjoy. Sadly, with the changes and updates to Minecraft, plus the mods not being updated to later versions of Minecraft, I eventually gave up on playing MC. I hope to be able to do similar things on WU and then when ready share the adventures with my friends.
As for the setup I will try to address it as general as possible so you at least have options and know how to use these options properly within range of balance and enjoyment. Listed from top to bottom in full list view (you can select this but its not needed, they are in the same order even with sub menus):
GENERAL
# Allow PvP - I have this enabled because im using a kingdom based map. Leave this off or on up to you.
# Epic settings - This means PvP server (WO) settings, it uses a skill curve where your actual skill calculates to a higher efficient level (for faster starting/solo purposes). There is documentation about this on the Wurmpedia.
# Home Server - Set this to true if you want a single kingdom map. (Confirmed by myself to not work after having first started server map, possible solution to toggle this correctly is to delete the server data and let the server remake it on a fresh boot). I am personally using the false flag because my map is divided into kingdoms and I am using the PvP option.
# Home Server Kingdom - Use whatever default kingdom you want. Use hovering over the option to see the kingdom id values.
MODIFIERS
# Skill gain - I am using 2.5. It is intended for solo and is still slightly too fast imo. I think an optimal value for someone with your playstyle and patience is about 1.5 - 3. Have tried with increments of 0.5 up to 10x gain and around 2.5 was most solid without being as overpowered to be done within a day.
# Characteristics start values - Use around 25 to start with. It will give you a very slight, about a month of an edge compared to WO. These basic skills (Body) serve to make things like carrying and stamina loss easier. (Check the Wurmpedia for more info on body skills)
# Mind logic start - I suggest anything above 21. I personally prefer putting it to 30 so you can queue up to 3 actions instead of the regular 2. (Once again Wurmpedia for more info).
# Body Control start - Same as Characteristics value.
# FS start - 10 to 15, to not be overpowered but have a decent start to not be owned by every single creature. FS is a hard grind but do not get eager to set it at a high start value, FS is very rewarding once it is high.
# Overall skill start - Keep at 1 imo.
# Player combat rating mod - You are a beginner at Wurm, combat will most likely for slow or clunky because in the start it is far from rewarding. I suggest a value between 1.5 - 3.
# Action speed - Now this is a tricky one because Action speed is in direct relation of skill gain. The higher the action timer the more skill you can thus making it instant is useless. I have messed around with this a lot so far and the most optimal is 5.0 for solo play. This could feel a tad fast or slow on some actions, but you have to understand that tool ql and what action it is matter VERY much. 5.0 gives good speeds for solo, in combination with the suggested Skill gain a value of 3.0 - 5.5 should be fine, I would stick below 5 at least though.
# Hota Delay - Ignore this, you wont know what this is nor is it likely that you will encounter it in the first 100+ hours of gameplay (that is being moderate).
# Max creatures - Whatever your pc can handle, suggested to keep this value below 20k. Creatures (yes even friendly ones) can be very annoying so an overcrowded world is not what you want.
# Aggressive creatures % - Personal pref, I tried some but went back to the 25% default. (You need and want these in mid - endgame).
# Disable Settlement and deeding costs... Speaks for itself. (settlement upkeep = false, no deeding costs = true)
# You wont have economy for now so dont worry about pool and Traders.
# Minimum mining hits - With my timer setting it is suggested to have this between 40 - 75. This is very much personal preference tho. You will see after a while of playing Wurm why I prefer 45+, even with WO action timers.
# Breeding time modifier - I set it to 7 because I am used to MASS breeding in WO. I think between 2 - 5 should be safe enough to not be too fast nor too slow.
# Field growth - Keep above 4h if you have the server running all the time. If you only launch server when playing then its safe between 0.5 - 4. Depending on your preference of how much you'd like to farm each x many hours.
I hope this clarifies settings for you, I have put it as general as possible with some options within the values, still holding in account your past experience and preferences based on your information. I have very little to do with my life, I use games like this to get away from stupid assignments for a few hours. Im in no rush at all to get to "end game".
And early on for combat I will choose a weaker animal that I know wont eventually kill me and set it to attack and go out and make a cuppa tea and have a smoke while it does its thing.
