I see a lot of info on how to mediate and how to skill up and how to pick a tree but I am struggling to find WHY one would meditate in the first place.
i am clearly ignorant

Because meditation grants you some special skills such as the ability to enchant a tile, magically refresh yourself without eating and teleport home. The bonuses are listed near the bottom of this page.
