Instead of rendering animations as a video, you could render them as image sequences by changing the output file format to an image format of your choosing. This way, each fully-rendered frame will be stored on your local disk and you'll just have to recombine them in a video editor later on.

You should always render animations as individual images, so you can a) continue a crashed/aborted render and b) do compositing without having to render everything again. Or c) output it into a different format or d).... and so on. Unless it's just a very small animation, use images.

You also don't need a video editor to combine them afterwards, Blender can do that as well.

Render as images instead of a video, just like PNG and then a folder and Blender will output a different PNG for each frame you render, you can then use Blender's build-in video editor to turn those images into a MP4 video, there are a couple tutorials on youtube about that

i was, seems blender just decided to ♥♥♥♥ with me by not autosaving and crashing 7 hours in

There is no special "autosaving". Finished pics are simply written to disk. If there were no images in the folder either Blender didn't even finish the first frame or they got deleted somehow or were saved elsewhere.
