Can I change the language?
It is not so important anyway I understand english but I just would like to know if I can change the language of Blender to Castilian/Spanish, and how, if it is possible.

UserPref, System, bottom right corner of the screen... Default Language Spanish (Espanol) or Spanish from Spain (Espanol de Espana) Then engage the Translate button

As Pte Jack said, but you need to enable "International Fonts" at the bottom right of the System tab to see the language and translate options.
