For a total beginner i always suggest watching the Blender Fundamentals Series first.

This will let you familiarize with the Interface and the core workspaces and will give you a quick introduction on the general features of blender. From there on you might want to figure what you would like to achieve in blender and then go into tutorials which cover these more specific things like Character Modelling, Rigging, Animation and so forth.

There's a reason Blender Guru is often cited as the best tutor for beginner blender users, his donut tutorial just can't be beat imo.

If you want a deep learning go for Blender Guru and start with his donut tutorial (the classic)
https://www.youtube.com/c/BlenderGuruOfficial

For easy to follow quick &dirty animations go with Ducky 3D

And for advanced animations I'd recommend
https://www.youtube.com/c/CGGeek

But there are a lot of good tutorials from other youtubers as well.
So don't be shy and try out others as well.

Blender Guru is ok to get an overview of what you can do in Blender but I wouldn't classify it as deep learning. Good beginner tutorial to get into it all, though.

If you are a total beginner to 3D I'd suggest to actually not start with the Blender Fundamentals series but do it second after e.g. the Blender Guru one. Reason being that the fundamentals series is a bit dry and mostly goes into the how, not so much into the why. But both are fine to start with, it's also a bit personal preference.

Grant Abbitt also has some very good beginner tutorials and low poly stuff:
