I think you are out of luck for now. I heard only latest AMD 6xxx cards are supported in Blender 3.0 for now with support for AMD 5xxx cards coming in the future.

BTW what is your CPU? 80 degrees is not ok and rendering in Blender is not as heavy as some extreme AVX tests, so shouldn't heat your CPU up this much. You better check your CPU cooler, what TDP this cooler can handle and how much heat your CPU produces. And check thermal grease. Do not use very cheap thermal grease - the one with thermal conductivity of 4 W/m*K and up is desirable while one with less than 2 W/m*K should be avoided.

1st: update the drivers to 21.12.1
https://www.amd.com/en/support/kb/release-notes/rn-rad-win-21-12-1

2nd:

For AMD GPUs, there is a new backend based on the HIP platform. In Blender 3.0, this is supported on Windows with RDNA and RDNA2 generation discrete graphics cards. It includes Radeon RX 5000 and RX 6000 series, and Radeon Pro W6000 series GPUs. Driver Radeon Pro 21.Q4 or Adrenalin 21.12.1 (or newer) is required.

We are working with AMD to add support for Linux and investigate earlier generation graphics cards, for the Blender 3.1 release.

Note that in the AMD driver, HIP is only officially supported for RDNA2 graphics cards. However we have found that RDNA also works in practice.

AMD GPUs don't have CUDA cores, CUDA cores are specific to Nvidia GPUs, AMD Drivers have not been updated for Blender 3.0 by AMD, Blender support for older AMD GPUs in Blender is still under development by Blender.org and I'm not sure if they have any support for the 6000 series AMD GPU. So for now, it's kind of a no win situation for anyone with an AMD GPU.

This is one of the reason why I made sure my Laptop had a Nvidia GPU and I switch my AMD RX580 out to a Nvidia RTX3090.

Blender support hasn't been great for AMD GPUs since the old Radeon HD7700 series. The only thing you could set was GPU compute for Cycles to get any type of GPU interaction. Other than that, the Setting was None in the Preferences.

Try HIP in the system preferences menu if the 5600 has RDNA Architecture and you have Radeon Pro Drivers from after the 4th quarter 2021 installed. Also, I believe this is for Cycles only, not Eevee.
