Thanks that helped. Turned it on now its where i have to wanted the cut.
You have "Adjust edit cage to modifier result" turned on in your Sub-D modifier, it's the little triangle icon the last in the row of four.
The knife tool won't work properly with this turned on! This feature means you are seeing a simplistic representation of how your mesh structure would be if the Sub-D mod was applied, so when you edit it you are not editing what you see. You are editing your real mesh which is hidden when this is turned on.
You need to turn this off.
Hmm thats strange. In the video tutorial im watching this feature was turned on or i ve missed this information during the tutorials.
You can edit some aspects of your mesh with this turned on, like moving verts etc, but you can't use the knife tool reliably.
You will see with this turned on that the edges of your mesh looked curved, only curves can be curves.
Your mesh's real edges(that you can't see in this view) are actually all straight, this is why the knife tool does not always work as expected in this view. It is cutting the straight edges of your real mesh, not the curved representation that you are seeing.
Start a cut from one of the verts, now move the mouse around over your mesh, you will see straight green lines being highlighted as you move over your mesh, this is your actual(hidden) mesh getting highlighted with it's straight edges.... and it's this which is actually being cut, not what you see.
Sometimes it works fine but sometimes, due to the way the knife tool works, it won't.
