How to solidify along global axis
I tried googleing and came across this (https://blender.community/c/rightclickselect/Dgdbbc/?sorting=hot) but no way that isnt a feature already.

Using the solidify to thicken this spoon shape thing, it sorta thickens it along the normals.

Rather what I want is like this image where it was thickened vertically, but this was achieved via extruding. Isnt there a way to do this with the solidify command?

I don't think that there is.

But I'm also pretty sure the solidify modifier is extruding anyway, the only difference between using the modifier and extruding it yourself would be that the modifier is non-destructive. If you plan on applying the solidify modifier anyway, than the non-destructive bit goes out the window. So if you are going to apply the solidify modifier after working with it, might as well skip the modifier in this case and just extrude it yourself.

What don't you like about extruding? It's doing exactly what you want, solidifying along an axis.
