This sounds like a conflict with a potential double hotkey assignment.
You can hit F3 to bring up the search menu type 'mark sharp' ...and check which hotkey is assigned to that on the right side of the entry.
I got my hotkeys set to blender classic so for me mark sharp is 'CTRL-E' (edit that actually brings up the edge menu and then i would have to hit k), while merge by is set to 'M'.. i haven't run into this issue so far so it might be worth looking into it.
I'm having issues replicating this, does this happen when you already have existing edges marked as sharp or can that happen on meshes without edge marks too?

Textures and Material should not influence mesh edge markings anyway.
