Symmetry been removed? (out-dated)
I'm used to using Symmetry and Dyntopo in Blender but the option to use Symmetry is gone in the modifiers, 'mirror' is not compatible with Dyntopo so Symmetry been removed or moved?

If you're talking Sculpt mode, look at the top menu line to the left of the Dyntopo selection, there you'll see a butterfly with xyz and a drop down beside it. That is the Symmetry tool now. If you click the drop down you'll find the Symmetrize button

As far as I can tell mirror has replaced symmetry in the modifiers but Dyntopo destroys any model on one side if used with mirror.

While the Symmetry you mentioned just seems to collapse on itself and make any model just lines that makes the entire model look completly flattened. Seems a bit annoying since means I can't actually mirror sculpt.

I've tried 3 different versions of Blender now, seems to be the same in all of the ones I tried, and it's easy to find as well. Don't know how you are missing it. Switch your layout to the Sculpting layout and it should be really easy to find.

The only way I can see you missing it is if you are just switching the 3d viewport to sculpt mode, rather than your whole layout. You can still access it if that is how you are doing it, you just have to switch the tab on the right side to the upper most "tool specific" tab - should be above the render settings tab.

Here's a screenshot of my blender window, I'm on the sculpting layout, the symmetry category is visible in the bottom right corner of the screenshot. You should be able to see the butterfly button that Pte Jack is referring to as well. Sorry for not highlighting it for you, just doing this quickly before heading to bed.

I have no idea what you're talking about. Turn on Symmetry (Mirror/Butterfly-XYZ) and mirror sculpt on what ever axis it enabled. Turn it off to stop mirroring.

It works perfectly fine, with Dynotopo, for me. Across 3 different versions of Blender. 2.9, and a couple of the recent 2.8 releases.

Edit: And the symmetry option was in the same place across those 3 different versions as well.

Did you actually turn on Dynotopo, or did you not click the confirmation box that pops up asking if you are okay with losing vertex color data or something?

If you don't click "Ok" to confirm on that popup, then Dynotopo doesn't actually get turned on.

That said, I wonder if the OPs problem might be related to origin point or pivot point not being set properly?

Could have sworn I saw a 'Symmetry' the tab on the far right in the modifier. Took a little break, starting to wondering if I'm just mis-remembering some things.

I suspect I was making some new feature up since closest thing to 'Symmetry' modifier was just the 'mirror' modifier but obviously have to apply the modifier after the base model is done since I can't technically use Dyntopo with mirror at the same time since that would destroy the other half.

i cant find symmetry at all. is there an addon im missing. please excuse me if this is a stupid question, but i am brand new to blender as a whole

I believe it's just called 'Mirror' now. If in edit mode then it should be in the far right on something that looks like a Wrench then click 'add modifier' then select 'Mirror' which should be somewhere under the 'Generate' column. Hope that helps.
