Don't know if by opening the Properties dialog for Blender in Steam would give you the 2.8 branch.

If you just want to keep track of hours inside Blender and have it as a shortcut you can just download a copy from their buildbots and add it as a Non-Steam game.

you cant, daily release for 2.79 and 2.8 are only available from https://builder.blender.org/download/ NOTE:2.8 is very buggy infact the latest release of 2.8 lights dont work and the viewport does not update for me anyway.

Even if it were available, you wouldn't be able to do much without it crashing. Many features of 2.8 are broken right now.

Just download the daily build you want and use Add Game / Add a non Steam Game. Browse to blender.exe in the build unpacked folder and you've got it 2.8 in the games library cathegory.

I'm a bit late, but you can easily delete all Blender data from the Steam folder and then put the new 2.8 files in there. Should work like that. At least that's the same with me.

Works perfectly. On Linux I just replaced the directory below with the one that comes in beta archive and it worked out of the box:
~/.steam/steam/SteamApps/common/Blender
