That's what I did, because Aidy specifically shows in the tutorial where it's supposed to be
But, as you can see, there is none
I've positioned the "N-menu" right next to the default one on screenshot, for you guys to see. I'm at a loss here
The cube object is present, by the way - at first I assumed the matcap option is missing because the are no objects, but.. there you go

Oh! You are right. My mistake. I can see that now. It's gone from your menu for some reason.
Regardless if you have an object in your scene or not, the feature should be avaliable.
Do you have an addon that might be conflicting with it?
I think I have found the source of the problem.
Are you using the "Bounding Box" view?
Some views for "Viewpoint Shading" don't allow for Matcap rendering, thus it gets removed from the Shading-tab.
Try shifting back to "Solid" and see if it appears again.

Oh, and, by the way, do you know why "N" shortcut stands for "November", by any chance?
