For mammoths, you should consider countering them with your own monsters. Giants and trolls are going to be your friends here, since mammoths are armored and they both get armor-piercing. Personally, I like to have a giant and two units of trolls in my stacks to act as my 'brute squad'. Orc Boar Big'uns are another good choice to bring against mammoths, since they're one of the few Greenskins units that get anti-large and they also have armor piercing.
Skin wolves are fast dangerous anti-large units, so keep them away from your own monsters and cavalry at all costs. Ideally, you'll want to trap them in between a unit of black orcs and a unit of orc big'uns. Since skin wolves don't have armor piercing, the armor of the black orcs will help survivability and the armor-piercing is great if you're dealing with armored skin wolves. Orc big'uns will absolutely slaughter anything that's unarmored, and the 'Bigger & 'Arder' trait gives them a small bonus to large units like skin wolves.
Arachnaroks also beat mammoths in a 1 v 1 and are imho a much better investment than giants.
