Did you see ever civil war or wwi soldiers their clothing are greyed out from all the smoke, explosion, fire...
I took part in two reenactments of the battle of Waterloo (as prussian militia, "Landwehr") with 2000+ soldiers on both sides + cannons etc., i pretty much get the picture. Sure, there's smoke everywhere, at times you don't see ♥♥♥♥ and there's the smell of sulphur in the air, but neither your clothes nor your face get black in any relevant way.
The greyed out clothes you mean come from sitting in dirt and dust for weeks without any chance of cleaning them, not the powder smoke. So yeah, you could say the units in the game are too clean in general, but that has nothing to do with powder smoke. Then the dwarfs, orcs etc. should be much more dirty, too.
