But in all honesty no, I don't remember the lore actually talking about dwarfs mounting any warbeast. I guess the Warhammer dwarfs, much like the Tolkien dwarves, like their feet on solid ground all the time.
I think of it as an example of their distrust of most thing. Can I rely on my feet? Yes. Can I rely on steel and stone? Yes, "Steel and Stone have always been good friends of the Dwarfs". Then I shall stand on my own two feet, with big steel boots, on solid stone. And trust that none of that will let me down.
They don't like fighting on earth. Or in forests. Or on wooden ships. And especially not while riding something with a mind of its own that could run away at any time.
Note that gyropcopters and the like do not have minds of their own. And while Thorgrim is carried by palanquin, he is thus relying on his bearers, fellow dwarfs, who are honoured to be so trusted.
Dwarfs on boars would work, but it's an iconic part of the Orc armies. In the model range and lore, Dwarfs use ponies, but don't ride them.

I mean, look at Warhammer Fantasy. In an attempt to "drive the storyline forwards" we had the Storm Of Chaos, Lets go die on Albion, Endtimes, and then Age of Sigmar....
Which highlights one of the more amusing bonuses of their 40k setting. The size, which allows for massive summer campaigns to decide the fate of a world(s) (Ichar IV, Third War of Armageddon, Gothic campaign, Fall of Cadia) without having a huge impact on the setting.
