Their charges really aren't all that strong. They look impressive, but they don't deal that much damage. Send in cheap units first if the morale loss bothers you.
They fulfill their role quite well: Stopping the enemy from getting to the more important dwarf units like ranged infantry, artillery and melee specialists who can then flank. Ironbreakers don't need to win a fight against black orcs unsupported, they just need to hold them off long enough.
The only time the Black Orcs reliably beat them is if the Ironbreakers are walking forward into the Black Orc charge and don't have their grenades.
