Seems like a sensible approach then would be to go for Wissenland early and the Nuln artillery school, which seems to be a decent early building chain.
Any growth buildings are useless once you have maxe your province so I would switch it out with city wath once you have maxed out the province. Warhorse Breeder's stables is kinda pointless so I'd go with something which increases public order if you play on very hard, otherwise just build another city watch, you'll need it once Norsca arrives.
Main building, Port (levelled ASAP for the income) and barracks for a few turns, maybe a blacksmith.
In every minor settlement, growth followed by city watch then walls.
Then when there's walls on all three, a barracks to lvl 3, a siege workshop (for the mortar) and a stables to lvl 2.
Back to Altdorf, demolish the barracks, and try for the colleges of magic. Blacksmith ==> Armoury. Altdorf does not need extra city defences.
Building to a Cathedral is nice if you can.
And when the growth is maxed out, you can start replaceing the fields with tailors guilds, except for that pastures.
That's how I did it in Legendary. Yes, it was slow. But it was solid.
With how poliically unstable the Empire is, solid is good, I see that. Pastures for the reinforcement bonus seems good, but yeah, estates all over is overkill.
What is your impression of the various artillery units? I've only tried the mortar (I'm really a VC kind of guy) and that one is rather nice - how are the others? I've noticed that walls is easiesst dealt with by hammering on the door until they let you in, more or less.
(Which is a bti unfortunate, but fair enough.).
