Whether or not you need reinforced walls in Nuln depends on how close it is to the frontline. If it is, keep the walls. Otherwise remove them for something else.
In vanilla you will want every type of recruitment building with the others to support them like forge.
Initially build farms to develop growth then burn them later when towns are at max level.
The short version is that Wissenland should be viewed as primarily an infantry recruitment province because of its access to the Master Swordsmith.
The gunnery school bonus is faction wide, not province specific, so there's no particular reason to build the engineer's workshop here.
The Menagerie, Temple of Sigmar or Wizard's Tower might be worthwhile if you really like building a lot of the corresponding units, but you are generally better off building demis/priests/witch hunters in Middenland and wizards in Altdorf due to special buildings.
I favour maximizing economy, so I'd have a tailor in Nuln and WIssenburg; you have space for barracks in Nuln.
