Well local co-op does include LAN coop. If we were still in a world where every multiplayer games accept LAN as a way to play online modes, we could say that local co-op only means "couch co-op", unfortunately most games don't, so this having it is a good thing and I think we can say it's local co-op (who would play it in split screen anyway xD)
True, but there is a difference between multiplayer that works well for a LAN party (all or at least most traffic goes through the local switch, internet not necessarily required) and multiplayer that is more online/internet focused (requires communication with and/or through internet servers that may cause lag).
I've read people say an internet connection is required to even start this game though losing connection once launched is fine, but I haven't tested that or even tried multiplayer yet. Would this game work well for a LAN party? Never actually been to one, I think they have gone out of style, but my friend at work keeps trying to get me to go to his.

If you can get LAN to work for this game, then yeah, having it at a LAN party would be pretty cool but would probably not be played for long. With only a certain amount of big baddies (with about half of them being reskins of others with slightly different attacks) available to you to fight, fighting the same thing over and over would get boring fairly fast. That, and everyone would need to have gone through far enough to unlock those fights because highest online missions you can take are dictated by the lowest person. Expect an hour or two of playtime in a LAN group before people want to switch to something else.
And yes, you do have to be connected to the internet to start the game because of some DRM in there that, as far as I know, hasn't been put on the store page (which really irritates me). However, I can confirm that you can unplug the internet after you get it running perfectly fine.
