There are the large monsters and the small monsters, both called "Oni" in this game.
The small Oni is simple hit them until they die then stand over them holding down the "purify" button to take the item drop from their body.
The large oni are different in that they have a layer of Armor that you must chip through before you can damage their real health, which is shown when they turn purple. A faster way to do this is to press the "Eye of Truth Button" which will cause the screen to turn slightly dark and for various parts of the oni to light up in various colors from White to Red. These parts can be damaged specifically and when you do enough damage to it, the part flies off which you can then purify to take the item from it. Note that EVERYONE gets an item even if only one person purifies a part and if you don't purify the part, the Oni regrows it and you can't deal damage to its HP from that part anymore.
Note that this doesn't mean if you cut off a large oni's leg it will start crawling or one leg hop toward you. This exposes it's "inner essence" which takes the same shape as the part you just chopped off. If you attack this part now, you will ignore their armor and deal damage directly to your health. Speed runners usually just cut off an easy to hit part then wail on it until it dies. Gatherers try to break off every single part of the Oni in order to maximize the drop gains.
Each attack and purification increases your Super Meter which lets you instantly kill small Oni, or deal large damage/Instantly break off a part to Large Oni. There is a Team Super Meter as well which goes up from team play stuff like hitting the same part as your ally or purifying a body part together.
As far as I remember, there are about 40+ Oni, including reskins, which tend to have slightly altered movesets. Aside from each oni's unique drops, if you kill an Oni, there is a chance they drop a "Mitama" which are souls with unique skillsets that you can stick to your weapon for use in battle. Their active skills are basically the "in-battle items" in the game with each mitama sorted into 1 of 10 categories
ATK, DEF, SPD, HLG, SPT, SPC, DCT, LCK, PLN, SUP
ATK = Most commonly seen. Actives boost attack power, give life steal, and "always crit." Passive recharges stamina faster if holding down the purify button.
DEF = "Tank" class. Actives give increase to shield gauge, "taunts" Oni, and grants invincibility. Passive gives you an extra layer of shield which can be recharged if you hold down the Purify button.
SPD = Second most common. Actives increases Stamina regen and run speed, gives a 1 hit shield that lasts forever until you get hit, and boosts attack speed. Passives reduce stamina usage.
HLG = Healing class. Actives gives party wide stamina regen boost, AOE healing, and Full Party Healing of Stamina, HP and Full Revive of everyone dead. Passive lets you clear off status effects by hitting your ally.
SPT = Magic Class. Hit an Oni (or a Large Oni's specific part) to target it and the hold down the purify button to charge it up to five levels. Active Spells are a homing magic missile, a rapid damage fountain attack that appears underneath the target and a powerful instant hit explosive attack.
SPC = "Space" class. Actives lets you "blink" a few feet in front of you to move faster or to avoid attacks, plant a purifying circle on the ground so you don't have to stand for several seconds over the part/dead oni, and a singularity that pulls the Oni toward it while doing some damage. Passive gives anyone who gets near you while you are purifying (active or regular) a boost to speed and skill recharge.
DCT = Debuff/Assassin class. Acives lets you pop a circle in front of you sending spikes into various parts of the oni that lower their defense, a cricle that hides any party member inside (useful for purifying) and a circle that paralyzes any enemy that touches it. Passive is a boost to critical damage from hitting Oni from behind.
LCK = "Random Chance" class. Actives fires a random spell from any other class or a shoots a Blank and wastes a charge, gives you a random atk/def buff or debuff or sets you on fire...or freezes you, and recharges your entire party's skills by a random amount for each skill. Passive recharges 1 random skill each time you purify a body part/Oni.
PLN = "Break EVERYTHING" class. Actives gives increase damage to Oni armor and body parts, debuffs a part so that if you break the part while it is on the part is instantly purified, or increases your Super Meter faster with each hit. Passive increases damage each time you kill an Oni or break it's parts.
SUP = Support Class. Actives gives Attack and Defense boost to people in a radius around you, splits damage to everyone in the party so everyone takes less damage and it can all be regenerated naturally (does not prevent someone from dying though) and gives nearby party members invincibility at the cost of slowly losing HP (you can die from this and it ends when you die or after a set amount of time passes). Passive gives any increase to your Super Meter to your allies as well, allowing EVERYONE to use their supers faster. (Not Team Super)
Then there are the weapons...which is probably faster if you just look them up online.
Long Sword, Dual Daggers, Spear, Gauntlets, Chain and Sickle, Bow, Club, Naginata, and Rifle
