Until we can get loadouts essentially, that counter isn't really viable. Though certain combinations should be great against other combinations.
Then you're asking the game to become a spear pokefest. Which it kind of is. Which is bland
not saying it is good or fun (i myself prefer sword + shield and i only use stabbing if i am about to get knocked out or die, or if i encounter a particularly annoying enemy, because i think it is boring to just stab everything to death) but if someone asks for the best way to defeat enemy x, i will obviously anwser with what i think is most efficient, not what i like to use most.
