Other than giving your opponent more of a target to strike at, In my experience I feel like weight helps to determine how much momentum your character can generate. That is a good and bad thing. You may find controlling a heavy character to be a little more clunky yet sturdy, whereas a skinny person may get swept off of their feet easier, but overall will be less susceptible to getting struck on their sides (which are concaved versus a more heavy character having a slight convex to their rotundity) and have less of a center of gravity allowing for perhaps slightly quicker dashing.
I'll say that I can play with both heavy and skinny characters, but I have always had a hard time playing a completely maxed out short character. I'm currently struggling with getting good hits to places other than knees! lol
More than anything, height is going to effect my gameplay the most, weight adjustment would be good for a slight difference in how the character feels in combat.
I do use some with average hight and super small people too though.
What kind of weapons do you use with the small people?
I wonder if there secretly is a strength to using short characters. Their tiny steps make it so difficult to dash effectively, and they have a hard time hitting anything other than the lower body and legs, aside from the occasionally lucky well-placed over head on the skull. They just suck! I wish we had some more diverse Master arena combat Ai to fight, like some dual wielding midgets lol
Spear and maces mostly, pretty much everything that's onehanded because they're carring a shield in the other hand. They're good with a greatsword too though. The even faster attacks of a small character with a already fast weapon that also has good range can be very effective.
I love putting high force through attacks and finishing fights in least amounts of swings. With swords I spam feints a learned many tricks and patterns I can rely on to reliably hit my oponents where I want, when I want. I guess I am what you'd consider someone who fights with finess. Not getting myself in danger and punishing hard anyone who does (I guess winning expert practice butt naked brainwashed me into this playstyle). I have become very good at manipulating the AI into forcing him to do specific things. I used to get the feint skill last, but now I prioritize it. I never use shields and hate one handed weapons (except the kinda op spear). I adore placing thrusts right inside people helmets and always hit exposed soft spots for maximum damage.
My favourite tier to fight on is probably Adept because of the high variety of weapons to use and the interesting armor compromises available. Though Novice is very fun for one shotting fools with two handed war hammer and Expert brings my favourite polearms as well.
I'd love to see your opinions on all that.

I tried to do a few play throughs of the practice arenas with a short guy with 0 weight sword and shield character. I noticed that because they are shorter they can land over heads with things like the two handed sword in the blink of an eye, making them extremely useful if you can manage to land a few of these, the only prob is that you have to be closer with your character and because of taking smaller steps it's harder to recover from a missed swing.
Never really thought of making a female character, I read something about how they have better balance, but I didn't ever test the theory out.

I too enjoy making only a few strikes that really count, and personally love using the long spear to jab armored opponents right inbetween their eyes with a quick little precise poke. I find that swinging wildly generally does not work very well. Lately I've been trying to figure out the best way to get headshots with any weapon; I think the trick is to have your mouse cursor directly on top of the head by the time the weapon arc is either half way or all the way through, and that pretty much goes for all body parts to a degree.
The Novice level was the most fun for me because of being able to fight The Beast with my guys, and also because that's when I get the spear.
