The ability to drop torch like the OP suggests is not a bad idea at all. I'm sure there will be more light items, but I hope there are more torches eventually too.
I mean certainly some ideas of what to do with torches are neat like drop button and so on, but you are roaming through a dark dungeon, having the torch as a burden makes sense.
(or)
make the torch a more viable weapon to fight with in the dungeon. that way you could carry a torch along with a shield. if the zombies attack you could thrust the torch and if you maintain contact for a second it would immolate the zombies clothes (and do a fair bit of D.O.T.)
Some sort of torch drop mechanic may introduce the possibility of losing your torch, or it becoming irretrievable, or destroyed from combat.
Perhaps players could craft torches as a consumable item. Collect wood, use a blade on clothes to cut into strips, find pitch or grease, add the ability to start a fire . . . then again, it could just end up leaving you in the dark.
I really only use my secondary loadout(two-handers) to deal with more than one enemies at once or the tougher enemies on level 4 & 5. Other than that I just use my one-handed weapon with the torch. It is perfectly viable.
This is more about why can't we have a button to drop the torch on the ground (and to a lesser degree hold it in the shield arm which I disagree with) than it is an argument about how viable 1h + torch is.
You can beat the entire game so far holding the torch in your offhand, but that doesn't address the QoL issue of not having a button that drops the torch on the ground. I can't really think of any reason why there shouldn't be a drop key which drops you're current primary/secondary and switches to your other set
