What is "Launch in Exclusive Mode?"
Should I choose that when I start up the game?

It's exclusive full-screen mode, rather than borderless windowed.

I personally don't recommend using it. The performance doesn't seem to be any different, and alt-tabbing results in some serious problems (at least for me). Borderless windowed is the one you should use unless you're having problems.
